The One Pan Quesadilla (Inspired by The Pioneer Women)
If you know me, then you know that I am no stranger to cooking shows. I watch the episodes, follow them on social media, and most definitely try out their recipes. :) A few weeks ago I came across Ree Drummonds (a.k.a The Pioneer Women!) one pan quesadilla recipe and was hooked. I had to give it a try — and let me tell you it got some rave reviews! Check out my version of this simple and delicious recipe.
Ingredients:
large cookie sheet
Salsa
Large flour tortillas (1 package)
1 precooked rotisserie chicken/ shredded ( I prefer Publix, but any will do)
1 can of black beans (drain and rinse)
1 generous cup of shredded cheese
1 can of diced tomatoes
Recipe:
Preheat your over to 350
Grab your tortillas and and lay them down one by one on the cookie sheet so they over lap. They should go over the edge - so don’t worry about that. ;)
Spread out your cheese over the tortillas, then your shredded chicken, black beans, tomatoes and salsa
Fold the tortilla pieces that are hanging over the edge into filling, then add additional tortillas to cover the top and complete the one pan quesadilla
Place quesadilla in the oven for 15 minutes and enjoy!
